375s butter
375g best quality dark chocolate
6 large eggs
1 tablespoon vanilla extract
500g caster sugar
225g plain flour
1 teaspoon salt
300g chopped walnuts
Melt chocolate and butter together in a double boiler.
Beat eggs and sugar together with the vanilla extract.
Allow chocolate mixture to cool a little once melted then beat with the eggs and sugar.
Add the nuts and flour and combine thoroughly.
Pour into a lined baking tin (33 x 23 x 5.5cm) and bake for about 25 minutes at 180 c/ Gas mark 4. They should be cracked and speckly on the surface, but gooey and damp in the centre.
Allow to cool completely before turning them out and cutting them - I didn't and the centre was still too molten to be able to cut properly!
This makes LOADS and my tin was slightly smaller but deeper so I found they took longer in the oven. Also, rather than putting 300g of walnuts, I did 200g and added about 150g of white chocolate chunks.
